Grape Varietals Red grapes, mostly Sangiovese. Vinification The Sangiovese grapes' freshness and aroma are engrained in this wine through a carbon maceration technique applied for 50% of the vinification. The remaining 50% of the grapes is fermented at a constant temperature with the traditional tecnique. Bottled at the end of October, Novello is in restaurants, specialty wine stores and wine bars from the first days of November. Wine Description Color: purple red. Nose: winey, fruity, with hints of ripe red fruit. Palate: smooth, fruity and fresh. Winemaker's Recommendations An all course wine, it is particularly suited to pair with soups and roast chestnuts.
