the olive has always been considered a sacred tree by all of the civilizations that have risen up in the Mediterranean basin, and the oil extracted from its fruits was used not only as a foodstuff but also for religious and ritualistic purposes: the Egyptians considered it a gift from the gods; the Phoenicians deemed it ‘liquid gold’; the Greeks and the Romans used it for medicinal purposes; the Jews used it to anoint their kings; and the Christians have always used it as part of their most important religious ceremonies.
Even now, at the dawn of the third millennium, olive oil remains a product laden with mysticism and, above all, a fundamental component in the now-famous Mediterranean diet. It is worth highlighting the fact that extra-virgin olive oil, as well as having considerable nutritional value, also has a taste and an aroma that vary according to the area of production, the variety of the olive trees, the storage techniques and the techniques used to process the olives. Rocca delle Macìe Extra-Virgin Olive Oil is produced exclusively using our own olives, which are pressed on the day that they are harvested, thus guaranteeing the unique characteristics and exceptionally low acidity of the oil.
